HEALTHY MUFFINS - - NO-FAT EXTRA FIBER BRAN

INGREDIENTS:


DIRECTIONS:



Stir together flour, sugar, baking powder, cinnamon & nutmeg. In a large mixing bowl combine cereal & milk.

Let stand 5 min or until cereal softens.

Add egg and banana to cereal. Beat well.

Add carrot, raisins and coconut.

Add flour mixture stirring only until combined. Pour into lightly greased 12-muffin pan. Bake at 400 degrees for 20- 25 min until lightly brown. Serve warm.




3/4 cup Sugar

1 tablespoon Baking Powder

1 1/4 cups whole wheat Flour

1 tsp cinnamon

1 tsp nutmeg


2 cups PC Fiber-First or All-Bran cereal

1 1/4 cups Skim or 1% milk

1 ripe banana (mashed)

1 Egg

1 grated/shredded carrot

1/4 cup unsweetened coconut

1/4 cup raisins
